Folks, I definitely think that beets are soooooo underrated. They are a tasty, simple, frugal and versatile ingredient, but woefully they are just not used enough.

I love that you can prepare them any number of ways, including roasting, steaming and pickling. All great options, and in my house we enjoy cooking beets every way possible.

And the fact that my kiddoes love beets as much as I do means that I’m always on the lookout for new and interesting ways to serve them up. So of course, learning how to cook beets in Instant Pot was a given. And guess what? It couldn’t be simpler!

Beets are a tasty root vegetable that are enjoyed all over the world. They are a low-calorie food that provides many health benefits. They’re chock full of important nutrients like manganese, folate, potassium and vitamins B2 and C. Beets are also especially rich in fiber, and known to have antioxidant properties that may help regulate blood pressure. #beetsforthewin

This Instant Pot Beet Salad recipe is a true family favorite in my house. The sweetness of the beets contrasts nicely with the slightly sharp orange dressing with fresh dill. And it is the perfect make-ahead dish, as allowing it to marinate really brings out the flavour. When I’m planning to serve this for dinner, I try to make it up that morning and then just keep it in the fridge until needed. Easy Peasy!

Peeps, this pressure cooker beets salad is soooo easy to make. Just double or even triple this recipe when you need feed a crowd. Now that I’ve started cooking beets in Instant Pot, I’ll never go back to cooking them another way!

How To Make Instant Pot Beets Salad

This beets salad comes together quickly and with only a handful of ingredients needed;

Instant Pot Beets Salad Ingredients

  • Beets
  • Lemon juice
  • Olive oil
  • Tangerine or orange juice
  • Tangerine or orange zest
  • Fresh dill

Instant Pot Beets Salad Instructions

  1. Add 1 1/2 cups of water to the bottom of the Instant Pot insert. Place the trivet inside the insert.
  2. Trim the beets, wash them and then place them on top of the Instant Pot trivet.
  3. Put the lid on, lock it and turn the valve to the sealing (not venting) position.
  4. Select the manual button and set to high pressure for 15 mins. When cook time is done, perform a quick pressure release.
  5. When cool, remove the beets and carefully slide or rub off the skin (note: the skin can be left on and eaten if you like).
  6. In a bowl, whisk together the olive oil, tangerine juice, zest, and fresh dill.
  7. Slice the beets and add to the bowl, tossing them to coat.

Instant Pot Beets Tips

  • The tangerine juice and zest is the big secret to this salad, as it adds some seriously delicious flavor. But if you don’t have tangerines, oranges or clementines are a fab alternative.
  • Arugula or other salad greens make great additions to this Instant Pot beets salad.
  • For a heartier salad, add in cheese and nuts. Blue cheese and walnuts pair nicely with beets.
  • The fresh dill adds amazing flavor, but you can switch things up and tailor the herbs to suit your taste.
  • You can use different colored beets, such as golden beets, to make this salad a little different.
  • Cook time does not include time for the Instant Pot to come up to pressure or for the pressure to release.

Chef’s Tip: Beet juice stains really easily, so you may want to wear gloves and an apron when working with them.

Pressure Cooker Beets Cooking Time

The exact cook time will depend on the size of your beets. I found cooking my beets in the Instant Pot for approximately 15 mins worked best. But you may need to cook a few mins longer if the beets are larger.

Ingredients

Instant Pot Beets Salad Ingredients

  • 8 medium-sized (approx 2.5 inches) beets unpeeled
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 2 tbsp tangerine juice orange or clementine juice as alternative
  • tangerine zest orange or clementine zest as alternative
  • 1 tbsp chopped fresh dill

Instructions

  • Add 1.5 cups of water to the bottom of the Instant Pot insert. Place the trivet inside the insert.
