Ingredients

  • 10 oz. 280 g fresh blackberries
  • 2 tbsp 2 tbsp lime juice
  • 1 tsp 1 tsp arrowroot powder (optional)
  • ½ cup (2 oz.) 120 ml (55 g) almond flour
  • ¼ cup (¾ oz.) 60 ml (25 g) coconut flour
  • 2 tbsp 2 tbsp erythritol
  • 1 1 eggeggs
  • 3 oz. 85 g butter

Serving

  • ¾ cup 180 ml heavy whipping cream (optional)

Making low carb simple

Instructions

Instructions are for 4 servings. Please modify as needed.

  1. Preheat the oven to 350°F (175°C).

  2. Put fresh or thawed blackberries in a pie dish or several heat-resistant ramekins. Squeeze lime juice on top. Sprinkle with arrowroot powder (optional but will act as a thickener) and combine well.

  3. Mix the rest of the ingredients, except the butter, into a crumbly dough. Spread dough over berries and top with thinly sliced butter.

  4. Bake pie in oven for 15 minutes or until it turns a nice golden color.

  5. Serve lukewarm—preferably with a dollop of whipped cream.

Tip

Chopped walnuts or pecans can be mixed into the topping to add a nutty crunch to the cobbler.

    Vanilla Sauce:
    500 ml cream, pinch of salt, 2 tbsp erythritol, 1 sliced up vanilla pod —> bring to a boil //// mix 2-3 tbsp of the boiling sauce with 2 egg yolks in a separate bowl thoroughly, then add the egg mix back into the sauce, that you’ve pulled off the stove //// remove vanilla pod, stir thoroughly with a whisk

    This was awesome! However, I made a few minor changes. I melted the butter and mixed it in with the cobbler dough, then placed thinly sliced butter on top. Absolutely awesome!

    I have made this twice. So yummy. 2nd time I did the brown sugar erythritol, 1/8tsp of cinnamon, pinch of salt and finely chopped pecans. We like it both ways.

    Arrowroot is pure starch that turns to blood sugar directly in the mouth. Not a good or low carb or keto ingredient. Each tsp has 2.6 grams starch.

    I would think physillium husk would be a better replacement for arrowroot. And mix butter for the dough to make it nice and crumbly. I left out the sweetener and it was still nice. Otherwise just use a drop of vanilla extract for sweetness

    Yes, but there is not a 1:1 ratio. You may want just a small sprinkle of the xanthan gum or it will get slimy. The arrowroot is optional so it's also possible to omit it.

    Now is this really 5g per serving. How much would you say is the amount needs for a serving? I’m nervous Bc the flour combine is 6g and I don’t know what the blackberry is.

    There are 4 servings, so you would divide the recipe by 4. Each serving would be 5g net carbs.

    You may substitute the berries in this dish, but the carb counts will vary. I would start with only a small amount of psyllium and see how it comes together. Psyllium can give a gelatinous quality, so add slowly.

    I really enjoyed making this recipe. However, I think it would be better to mention that ramekins are a must. And also maybe next time I’ll use cobbler dough at the bottom, and berries on top. Impossible to take out the portion smoothly

    I actually added a bit of psillium husk. I just sprinkled all over berries, and waited for P.H. to sort of get absorbed/ dissolved. Less than a teaspoon was enough for all the berries

    Far too much butter (and I still halfed it) and just didn't give the crunchy topping I hoped for. The texture of the crumble itself was great but the taste was disappointing. Next time I'll try with a granulated brown sugar replacement.

    This is one of my favourite puddings. I mixed softened butter into the cobbler, using half the amount of erythitol. It is so easy to make. A thumbs up from my husband who has now lost 32lb on this diet. We have 2 puddings each day!

    Made this today with frozen blueberries & brown sugar Swerve. I know about the bb’s carbs but boyfriend complains about the seeds in other berries. Also skipped the lime juice (what’s it do anyhow). So much better! Gotta remember nuts next time.
