Believe it or not, there's a lot you can do with a box of pancake mix that goes way beyond pancakes and waffles!

I've made crepes with pancake mix and I've made muffins with pancake mix. I've even made pancakes with muffin mix. Now I'm excited to show you how to make cookies with pancake mix.

Not only is it possible to make cookies with pancake mix, but it's possible to make really good cookies with it.

Plus, using pancake mix cuts down on the amount of ingredients you need to get out of the pantry and the amount of dishes you'll need to wash when you're done baking! The same is true for these Cake Mix Pancakes.

Can You Use Pancake Mix Instead of Flour for Cookies?

Yes! That's exactly what I did for this cookie recipe. In fact, I used pancake mix instead of flour, baking powder, and salt. The mix replaces all three ingredients.

Though pancake mix does usually have sugar in it, too, I like my cookies a whole lot sweeter than my pancakes, so I added more sugar (granulated and brown) to these cookies.

Are Pancake Mix Cookies Different From Regular Cookies?

In my experience, pancake mix cookies are generally a little flatter than the typical cookies you might bake.

That's because, while pancake mix does have some leavener in it, it doesn't have quite as much as you might add to the typical cookie batter.

But despite being a bit flat, these cookies are still nice and chewy!

Can I Use Any Kind of Pancake Mix?

I haven't tried every kind of pancake mix in this cookie recipe, but I did make these with both Annie's Pancake Mix and Bisquick Pancake Mix, two mixes that are pretty different, and they came out virtually the same.

Mixes often have some oils in them and all are slightly different, so your cookies could vary slightly depending on what kind of mix you use, but this recipe is basic enough that the cookies should still be tasty and a few little tweaks could make them even better.

Are Pancake Mix Cookies Easier Than Other Cookies?

To be fair, making cookies with pancake mix mostly just means getting the pancake mix out of your pantry instead of flour, baking powder (and/or baking soda), and salt.

But because you have those dry ingredients all in one, you don't have to put them all in a mixing bowl and whisk them together.

When it's time to incorporate the dry ingredients, you can simply add the pancake mix to your mixing bowl with butter, sugar, egg, and vanilla.

That means you can make these cookies with pancake mix in just one bowl! Which is a win for me!

Ingredients Needed

You don't need much to make these cookies. Here's everything that's required:

  • Unsalted butter
  • Granulated sugar
  • Brown sugar
  • Egg
  • Vanilla
  • Pancake mix
  • Chocolate chips (or the mix-ins of your choice)

How to Make Cookies with Pancake Mix

These cookies are incredibly easy to make. I would say the best part is that they can be made in one bowl, but I really think the best part is the taste and consistency of these cookies.

To start, preheat oven to 350 degrees and line two baking sheets with parchment paper or Silpats.

In a stand mixer or in a bowl with hand mixer, cream together butter, granulated sugar, and brown sugar until light and fluffy, 3-4 minutes.

Mix in egg and vanilla until just combined.

With the mixer on low, blend in pancake mix until just combined, taking care not to over-mix. Fold in chocolate chips.

If you don't want chocolate chip cookies, you can fold in any mix-ins here. Things like white chocolate chips, walnuts, dried cranberries, or sprinkles would work well!

I recommend chilling the dough for about 30 minutes here.

Scoop about 3 Tbsp cookie dough (I use a #20 cookie scoop) onto prepared cookie sheets, about two inches apart.

Cookies will spread a bit, so definitely make sure you leave that space.

Bake for 10-12 minutes, until cookies are just turning golden around edges.

Let the cookies cool in pan for a couple minutes before moving to wire racks to cool completely.

And the most perfect cookie has been baked!

I definitely experimented a bit to get to this recipe. The first time I tried to make cookies with pancake mix, I used way too much butter and the cookies spread everywhere.

But with this ratio of ingredients, chilling time, and cooking time, the cookies spread just enough to turn golden around the edges, but still be chewy and soft in the middle.

I'm in love!

What Else Can Be Made With Pancake Mix?

Because pancake mixes mostly consist of flour, leavener, sweetener, and salt, it can be used to make all kinds of baked goods.

I don't think it makes baking too much easier, but it can be a really helpful thing when you run out of all-purpose flour!
