On a side note, when I bake ball-shaped drop cookies like this, I LOVE using the Wilton Muffin Top Pan instead of a regular baking sheet.

It helps them hold their round shape and keeps them spaced evenly.

How to Make this Angel Pillows Cookie Recipe

Here are the ingredients you need to gather to get started making these Pillow Cookies

Keep in mind, all of the ingredient amounts you’ll need are in the printable recipe card below.

  • All Purpose flour andPowdered sugar
  • Cornstarch and salt
  • 1 vanilla bean, split in half
  • Granulated sugar and butter

Directions for making thisPillow Cookies Recipe

Preheat your oven to 350 degrees F.

In a food processor, blend all of your flour, powdered sugar, cornstarch and salt together until they are thoroughly combined.

Using a knife, scrape the seeds from the vanilla bean and add it to the food processor. Then add in your butter and process it again until a dough ball forms.

Roll about a tablespoon of dough into a ball and place on an ungreased cookie sheet.

Tip! The Wilton Mini Whoopie Pie pan is perfect for baking these!

Bake your cookies at 350 degrees F for 10-12 minutes, or just until the edges start to brown. Cool your cookies for about 2 minutes and then roll the top of each cookie in sugar and set them aside on a baking rack to cool.

Ingredients

  • Preheat your oven to 350 degrees F.

  • In a food processor or using a mixer, blend flour, powdered sugar, cornstarch and salt until combined.

  • Using a knife, scrape the seeds from the vanilla bean and add to the food processor.

  • Roll about a tablespoon of dough into a ball and place on an ungreased cookie sheet.

  • Add butter and process until a dough ball forms.

  • Bake for 10 minutes, or just until the edges start to brown.

  • Cool for 1-2 minutes.

  • Roll the top of each cookie in granulated sugar and move to cooling rack to finish cooling.

Notes

Please note that you do need to let these cornstarch cookies cool for at least 1-2 minutes before dipping the top in granulated sugar - or they will fall apart! Be very gentle when doing this because they are EXTREMELY soft and I broke ½ of my first batch of these cookies by doing it too soon! But don't wait too long because they need to be slightly warm for the granulated sugar to stick!
